You are standing in the cooking-oil aisle, looking at a bottle labelled wood-pressed oil.
The phrase may bring to mind a traditional wooden press, slowly crushing oilseeds. It may also suggest purity, minimal processing or better nutrition.
But the term itself does not answer every important question.
First, How Is Oil Released from a Seed?
Oil-bearing seeds and nuts contain oil within their cellular structure.
To obtain the oil, the raw material must be prepared and subjected to pressure. Depending on the oil and manufacturer, preparation may include:
- Cleaning
- Sorting
- Drying
- Removing shells or hulls
- Crushing or flaking
- Conditioning
- Pressing
- Settling
- Filtering
- Packing
Mechanical pressure separates part of the liquid oil from the solid material. The remaining solid portion is commonly called press cake or oil cake.
The amount of oil recovered depends on more than the material used to build the press. It can also be affected by the seed, moisture level, preparation, pressure, pressing speed, equipment design and operating temperature.
The word wood-pressed therefore describes one part of a production story. It does not describe every production condition.

- Kachi ghani

- Cold pressed
These terms may overlap in everyday use, but they should not automatically be treated as identical technical definitions.
The shape of the machine, rotation speed, seed preparation and operating conditions can differ between producers. Some systems may use wooden food-contact components alongside metal shafts, motors, collection trays or filters.
The responsible question is not:
“Is every part of the machine made from wood?”
It is:
“What does the producer mean by wood-pressed, and what records support that description?”
Wood-Pressed and Cold-Pressed Are Not Automatically the Same Claim

Codex describes cold-pressed oils as edible vegetable oils obtained by mechanical procedures, such as expelling or pressing, without the application of heat. Permitted purification may include washing with water, settling, filtering and centrifuging.
That is more specific than simply saying that a wooden press was used.
Mechanical pressing can generate heat through friction even when the producer does not deliberately heat the seeds or the oil. The actual temperature can vary with:
- Press design
- Rotation or pressing speed
- Pressure
- Seed moisture
- Seed pretreatment
- Length of operation
- Ambient conditions
- Equipment maintenance
Therefore, a wood-pressed oil should not automatically be called cold pressed unless the producer can demonstrate that the process meets the applicable definition and labelling requirements.
A clearer distinction

Does Wood Pressing Mean “No Heat”?
Not necessarily.
A producer may avoid roasting or externally heating the seeds, but pressure and friction can still raise the temperature during mechanical extraction.
This distinction matters because phrases such as “no heat,” “cold extracted” or “below a stated temperature” are more specific than the general term wood-pressed.
If temperature is central to the product’s positioning, ask:
- Was external heat applied to the seed or oil?
- Was the temperature measured during pressing?
- Where was it measured?
- Was it recorded for every batch?
- What maximum temperature was observed?
- Which standard or internal specification defines the claim?
A machine’s slow appearance or traditional design is not a temperature record.
Does Wood-Pressed Mean Unrefined?
It may indicate a mechanically extracted oil that has not undergone conventional refining, but the label should make this clear.
After pressing, oil may still be:
- Allowed to settle
- Decanted
- Filtered
- Centrifuged
- Stored before packing
- Transferred between food-grade containers
These are processing steps. They do not necessarily turn the oil into a conventionally refined oil.
At the same time, the word wood-pressed alone does not provide a complete processing declaration. The producer should be able to explain what happened after extraction.
What Should the Term Prove?
A responsible wood-pressed claim should connect to evidence in five areas.
1. Exact Oilseed Identity
The label should clearly identify the oil source—for example:
The exact seed or nut matters more than the romance of the press because different oils have different compositions, flavours, storage needs and cooking characteristics.
- Groundnut
- Sesame
- Mustard
- Coconut
- Sunflower
- Safflower
- Flaxseed
- Almond
Where relevant, botanical, varietal or origin claims require separate documentation.
2. Mechanical Extraction Method
The supplier should be able to describe the press used and the role of its wooden components.
Useful supporting information may include:
- Equipment description
- Food-contact materials
- Pressing principle
- Batch-production record
- Cleaning procedure
- Maintenance controls
“Traditional” should not replace a clear process description.
3. Heat and Temperature Record
If the product is also marketed as cold pressed, no-heat extracted or processed below a stated temperature, that statement should be supported by a defined monitoring method.

- When it was measured

5. Quality, Safety and Traceability
The finished oil should meet applicable requirements for its named oil and market.
Supporting controls may include:

A traditional process still requires modern food-safety discipline.
What the Term Does Not Automatically Prove

Does Colour or Aroma Prove Authenticity?
No.
Wood-pressed oils may retain distinctive colour, aroma or flavour, but sensory characteristics can vary with:
- Seed variety
- Growing conditions
- Harvest maturity
- Storage
- Roasting or conditioning
- Pressing conditions
- Filtration
- Age of the oil
- Exposure to light, oxygen and heat
A darker colour does not automatically mean more nutrients. A stronger aroma does not automatically mean greater purity. Visible sediment does not automatically prove authenticity.

This means the statement:
“Wood-pressed oils retain more nutrients”
is too broad without identifying:
- Which oil
- Which nutrient or compound
- Compared with what
- Under which processing conditions
- At what point in storage
- Using which analytical method
Wood pressing may be part of a carefully controlled process, but the term itself is not a nutrition analysis.
Storage Is Part of the Quality Story
Oils can change during storage through exposure to oxygen, light and heat.
The appropriate shelf life depends on the oil, its composition, processing, packaging, storage conditions and quality at packing.
Practical steps include:
- Keep the container tightly closed.
- Store it away from direct sunlight and heat.
- Follow the pack’s storage instructions.
- Avoid introducing water or food particles.
- Check the best-before information.
Do not rely only on the extraction claim when assessing an old or poorly stored bottle.
