You are standing in the sweetener aisle looking at three brown-toned products: a block of jaggery, a pouch of khandsari and a packet of brown sugar.
They can look like variations of the same idea. The darker colour may even suggest a simple hierarchy: white sugar is highly processed, brown sugar is less processed, khandsari is more traditional, and jaggery is the least processed of all.
The real story is more useful—and more interesting.
Quick Clarity: Jaggery, khandsari and brown sugar should not be treated as interchangeable names for “less processed sugar.” Their identities depend on how sugarcane juice or sugar is concentrated, crystallised, separated and finished. Colour alone cannot tell you which processing pathway produced the sweetener.
That distinction matters more than whether one product simply looks darker or more rustic.
Start With the Sugarcane, Not the Colour
Sugarcane begins with something very different from the dry crystals or solid jaggery you eventually bring home.
Freshly extracted cane juice contains water, sugars—predominantly sucrose—and other naturally occurring constituents from the plant.
To turn that juice into a shelf-stable sweetener, processors have to remove substantial amounts of water and manage what happens to the increasingly concentrated sugar solution.

The important words here are crystallisation and separation.

Khandsari takes the process further towards crystallised sugar.
Brown sugar is itself a sugar category and should not simply be assumed to be powdered jaggery or khandsari because it is brown.
That gives us the central idea for the entire comparison:

How Is Jaggery Made?
Jaggery—also commonly called gur in India—is traditionally associated with concentrating sugarcane juice into a dense sweetening product rather than taking the juice through the full purification and crystallised-sugar pathway used for highly refined sugar.
FSSAI separately recognises Gur or Jaggery as a food category, including Cane Jaggery or Cane Gur.
At a simplified process level, cane jaggery commonly follows a pathway such as:
Sugarcane → Juice extraction → Clarification → Boiling and concentration → Thickened mass → Cooling and setting
The exact equipment and clarification practices can vary between producers, so a traditional-looking jaggery block should not be used to infer a specific manufacturing method without product-specific information.
The crucial difference is what happens during concentration.
Instead of driving the system primarily towards separated sugar crystals, the concentrated cane material is retained as the finished product.
That helps explain jaggery's characteristic colour, flavour, aroma and physical form.
It can be sold in blocks, pieces, granules or powder depending on how the finished material is handled.
The important consumer distinction
Jaggery is therefore not simply brown-coloured white sugar.
Its processing pathway is different.
But that does not mean every dark, rustic-looking sweetener is jaggery—or that every jaggery has been produced using exactly the same process.
How Is Khandsari Made?
Khandsari occupies an interesting position because visually it can resemble coarse or pale brown crystalline sugar, while its production history is connected to traditional cane-sugar processing.
Under FSSAI standards, khandsari sugar is obtained from sugarcane juice by an open-pan process and may occur in crystalline or powder form. The standard recognises Khandsari Sugar Desi and Khandsari Sugar (Sulphur), with different compositional specifications.
That immediately tells us something important.
Khandsari is not defined merely by being brown.
Its identity is linked to a specific sugarcane-processing pathway.
Sugarcane → Juice extraction → Clarification → Open-pan concentration → Crystallisation → Separation → Khandsari crystals
Compare that with jaggery: Sugarcane → Juice extraction → Clarification → Concentration → Concentrated mass retained → Jaggery
The introduction of a meaningful crystallisation and separation stage changes the product.
Khandsari therefore sits closer to the world of crystalline sugar than jaggery does.

Codex defines soft brown sugar as a fine-grain purified moist sugar, light to dark brown in colour, with a specified minimum combined sucrose and invert-sugar content. Codex separately defines raw cane sugar as partially purified sucrose crystallised from partially purified cane juice and characterised by sucrose crystals covered with a film of cane molasses.
This is an important technical distinction because products that all appear brown can belong to different sugar categories.
Commercial brown sugars may derive their colour and characteristic flavour from molasses associated with the sugar crystals. Depending on the product and manufacturing system, that molasses relationship can arise through different production pathways.
So when a package simply says “brown sugar,” do not mentally translate that into:
“This must be jaggery in crystal form.”
It may not be.

The comparison becomes much clearer when you stop ranking the products and instead follow what happens during manufacture.

That is because the manufacturing distinction is much stronger than the popular colour-based shortcut.
Why “Brown = Less Processed” Is Too Simple
Imagine three bowls:
one filled with golden-brown jaggery powder,
one with pale khandsari crystals,
and one with dark brown sugar.
If you rank them only by colour, the darkest product may appear to be the least processed.
But colour cannot reconstruct a manufacturing process.
A darker sugar can reflect more molasses-associated material, a different raw material, concentration conditions or another product-specific factor.
A lighter khandsari does not automatically mean it has become equivalent to refined white sugar.
And two jaggeries of different colours do not automatically represent different levels of nutritional quality.
Colour is evidence of appearance—not a complete processing record.
This principle extends beyond sugar.
Whenever a food claim depends on how something was made, visual appearance should prompt a question rather than provide the answer.
Does Jaggery Contain More Than Refined Sugar?
Because jaggery retains more of the concentrated cane matrix than highly purified crystalline sugar, its composition is not identical to refined white sugar.
It can contain non-sucrose constituents that are present at much lower levels in highly purified sugar.
This difference is real.
But the next step is where food marketing can overreach.
The existence of additional minerals or other constituents does not automatically turn jaggery into a nutritionally unrestricted food.
Jaggery remains predominantly a sugar-rich sweetener.
Likewise, khandsari and brown sugar should not be treated as nutritionally unlimited simply because they retain or contain material that gives them a less-white appearance.
The useful nutritional question is therefore not:
“Which sugar can I eat without worrying because it is natural?”
It is:
“Which sweetener suits the food I am making, and how much sweetener am I using overall?”

Food science can examine composition, processing, contaminants, quality parameters and nutritional contribution.
One does not need to exaggerate the other.
