Five Oils Can Look Similar—and Still Behave Differently in the Kitchen

Five bottles of oil can sit beside the same stove and look almost interchangeable. Then dinner begins.

One oil quietly carries a vegetable stir-fry. Another contributes a familiar nutty character. Mustard oil can become part of the flavour architecture of the dish itself. Sesame oil may bring its own distinctive seed character. And two bottles labelled “sunflower” or “safflower” may not even behave identically if they come from different fatty-acid varieties.

So which cooking oil is “best”?

That is usually the wrong first question.

Quick Clarity

Groundnut, sunflower, safflower, mustard and sesame oils are not simply five versions of the same cooking fat. Their seed source, fatty-acid profile, minor compounds, processing and flavour can change how they behave in storage, heating and cooking—and how strongly they influence the finished dish. The practical choice is therefore not a universal winner. It is the right oil for the cooking job, flavour and actual product in your hand.

The Shortcut That Creates the Confusion

Oil shopping often gets reduced to one number:

Which oil has the highest smoke point?

Or one label:

Is it cold-pressed?

Or one nutrient:

Is it high in omega-6?

Each can tell you something. None tells you everything.

Cooking performance depends on several interacting variables: fatty-acid composition, antioxidants and other minor compounds, refining or pressing, the condition and age of the oil, temperature, duration of heating, exposure to oxygen and whether the oil is repeatedly heated.

Research on frying oils shows that heat can drive oxidation, hydrolysis and polymerisation, and that the rate of deterioration is influenced by both the oil itself and the way it is used.

That gives us a more useful starting point:

Do not choose an oil from its seed name alone. Choose from the combination of oil identity + processing + cooking job + flavour fit + actual use.

First, Understand What Actually Changes Between These Oils

All five are edible vegetable oils, but their chemistry is not identical.

Codex distinguishes named oils such as groundnut, safflower, sesame and sunflower oil by their source and compositional characteristics. It also separately recognises high-oleic forms of sunflower and safflower oil.

That last distinction matters more in the kitchen than many shoppers realise.

Groundnut Oil

Groundnut—or peanut—oil is characterised mainly by oleic and linoleic fatty acids, with palmitic acid among its other important fatty acids. Its exact composition can vary with variety, maturity, climate and growing conditions.

Higher proportions of oleic acid relative to linoleic acid generally improve oxidative stability. That is why even within the broad category “groundnut oil,” composition can matter.

From a culinary perspective, groundnut oil can therefore make sense when you want an oil that works comfortably across everyday cooking while still contributing some seed character, depending on how it has been processed.

Sunflower Oil

“Sunflower oil” is not one single fatty-acid profile.

Conventional sunflower oil is typically much more linoleic-rich, while high-oleic sunflower varieties have been developed with substantially more oleic acid. Codex separately recognises high-oleic sunflower oil and specifies at least 75% oleic acid for that category.

That distinction affects oxidative behaviour.

So a statement such as “sunflower oil is good for high-heat cooking” is incomplete unless you know which sunflower oil and how it has been processed.

Safflower Oil

Safflower creates a similar problem.

Traditional safflower oil can be strongly linoleic-dominant, while high-oleic safflower oil is a materially different oil from a fatty-acid perspective. Codex defines high-oleic safflower oil as containing at least 70% oleic acid.

This is a useful example of why the plant name on the front of the bottle cannot answer every cooking question.

Two safflower oils can share the same crop identity while differing considerably in their oleic-to-linoleic balance.

Mustard Oil

Mustard oil stands apart because its sensory character can be especially important.

Codex recognises mustardseed oil as oil derived from specified white, brown/yellow and black mustard species.

Mustard's characteristic pungency is associated with isothiocyanate chemistry; allyl isothiocyanate is strongly associated with the sharp sensory character of mustard preparations.

In practical cooking, that means mustard oil may be selected not simply as a heat-transfer medium but because its assertive character belongs in the flavour profile of the recipe.

Sesame Oil

Sesame oil brings another important lesson.

It contains substantial unsaturated fat, yet studies have documented notable oxidative stability associated with sesame lignans and tocopherols. Processing also matters: roasting and refining can change the minor compounds and stability characteristics of sesame oil.

So sesame demonstrates why predicting cooking behaviour from “percentage unsaturated fat” alone is too simplistic.

The whole oil matrix matters.

Five Oils, Five Different Kitchen Personalities

Instead of ranking them from first to fifth, it is more useful to ask what changes when you cook with them.

This is deliberately not a “healthiest oil” ranking.

Public-health guidance gives us an important broader principle: dietary fat quality matters, and unsaturated fats from plant sources are generally preferred as replacements for saturated and trans fats.

But that population-level nutrition principle does not tell you whether mustard, groundnut or sesame will taste right in tonight’s recipe—or whether one specific bottle will withstand a particular heating pattern better than another.

Those are different questions.

Smoke Point Matters—but It Is Not the Whole Decision

Smoke point is useful because visible smoking tells you that an oil has been heated far enough for volatile breakdown products to appear.

But treating a published smoke-point number as a permanent identity of an oil is misleading.

The behaviour of oil under heat depends on more than its seed source. Free fatty acids, minor components, refining, initial oil quality, antioxidants, temperature, oxygen exposure and repeated use all influence deterioration. Frying research consistently describes oil degradation as a multi-variable process rather than a single smoke-point event.

This is particularly important when comparing a refined oil with a pressed or minimally processed version of the same seed oil.

Do not automatically transfer a temperature figure from one version of an oil to every bottle carrying the same seed name.

And do not deliberately make an oil smoke simply because a recipe or internet chart says its smoke point is high.

Smoke is better treated as a warning from the pan than as a cooking target.

Pressed Versus Refined Changes the Comparison Again

This is where Article 036 connects directly with a bigger oil-shopping question.

Codex defines virgin oils as oils obtained by mechanical procedures, with heat permitted, while cold-pressed oils are obtained by mechanical procedures without the application of heat; permitted purification is limited to processes such as washing, settling, filtering and centrifuging.

Refining can change colour, flavour, free-fatty-acid levels and minor constituents. That can make refined oils useful for applications where neutrality or particular processing performance is required.

Pressed oils may retain more characteristic flavour and certain minor compounds—but that does not create a universal rule that pressed = superior for every cooking task.

The useful question is:

What was done to this oil, and does that processing suit what I want to do with it?

The best oil choice is not the bottle with the most impressive identity—it is the oil whose identity, processing and kitchen job actually agree.

What Changes in Real Cooking?

Consider five common situations.

1. You Want the Spices to Lead

If your recipe depends on delicate herbs, vegetables or a spice mixture and you do not want the oil to become a dominant flavour, a relatively mild oil may be useful.

Depending on the individual product, sunflower or safflower may suit this role particularly well.

But check the bottle rather than assuming all versions are identical.

2. You Want a Versatile Everyday Oil

Groundnut oil can be useful when you want broad cooking flexibility with a flavour that often sits comfortably alongside Indian savoury foods.

Its oleic/linoleic balance remains relevant to stability, however, and that balance is not identical across every groundnut variety or product.

3. The Oil Is Part of the Recipe’s Identity

Mustard oil is the clearest example.

In dishes built around its pungent character, replacing it with a highly neutral oil does not merely change the cooking medium—it changes the flavour structure.

That is why asking whether mustard oil is “better” than sunflower oil misses the culinary point. They may be performing different jobs.

4. You Want Sesame Character

Sesame oil can contribute aroma and flavour in ways a neutral oil cannot.

But “sesame oil” itself covers different sensory possibilities. Processing and roasting can substantially influence its composition, aroma and oxidative behaviour.

The bottle therefore matters as much as the seed name.

5. You Are Cooking at High Heat for a Long Time

Now oxidative stability becomes more important.

More double bonds generally create more sites susceptible to oxidation, which is one reason high-oleic versions of oils have technological advantages for demanding heat applications. But natural antioxidants and other minor compounds also affect stability—as sesame oil illustrates particularly well.

The practical lesson is not simply “MUFA good, PUFA bad.”

It is to understand the complete oil and the heating conditions.

When choosing among these oils, use this sequence.

1. Which oil is it—exactly?

Groundnut? Sunflower? Safflower? Mustard? Sesame?

Then go one step deeper where relevant: conventional or high-oleic? Roasted or unroasted? Refined, virgin, cold-pressed or another clearly documented process?

2. What cooking job am I giving it?

Think beyond “cooking.”

Is it for:

  • everyday sautéing and sabzi,
  • tadka or tempering,
  • shallow frying,
  • prolonged high-temperature cooking,
  • occasional deep frying,
  • marinades or dressings,
  • or finishing for flavour?

Different jobs create different priorities.

3. Do I want the oil to disappear—or participate?

This is one of the most useful culinary questions.

Sunflower or safflower may be chosen when you want the other ingredients to dominate.

Groundnut can offer a middle ground.

Mustard and some sesame oils can intentionally become part of the dish's identity.

These are culinary differences, not moral rankings.

4. How will I actually heat it?

A short sauté is not the same thermal challenge as prolonged deep frying.

Repeated high-temperature use increases oil deterioration through oxidation, hydrolysis and polymerisation.

Choosing an appropriate oil does not make poor heat management irrelevant.

5. Is the actual bottle transparent enough to evaluate?

Look for meaningful information about oil identity and processing rather than relying only on front-label language.

When a characteristic such as high oleic materially changes the composition, that information can be more useful than a generic claim that the oil is simply “good for cooking.”

Do You Need Five Oils in Your Kitchen?

No.

Understanding five oils does not mean buying five oils.

For many households, a more practical system is:

one dependable everyday oil + one flavour-specific oil when the cuisine calls for it.

Another household may reasonably use two or three because its cooking crosses several culinary traditions.

The goal is not an impressive oil shelf.

It is a functional one.

A household that cooks mostly quick sabzis, dal, rice dishes and occasional shallow-fried foods may need a different combination from one regularly making Bengali dishes where mustard oil is integral, or a household using sesame oil in cuisines where its flavour has a specific role.

Your pantry should follow your cooking—not an internet ranking.

Common Oil Myths Worth Leaving Behind

“One seed oil is healthiest for everybody.”

Too broad.

Overall dietary pattern, quantity, fatty-acid replacement, cooking method and individual product characteristics all matter.

“A high smoke point means an oil cannot deteriorate.”

No.

Thermal degradation involves more than visible smoking, and repeated heating changes oils even when cooking is managed below a quoted smoke-point figure.

“All sunflower oil is the same.”

No.

Conventional and high-oleic sunflower oils can have substantially different fatty-acid profiles. The same principle applies to safflower.

“Cold-pressed automatically means best for every purpose.”

No.

Processing changes oil characteristics, but suitability still depends on the cooking application, product quality and desired flavour.

“Strong flavour means poor quality.”

Not necessarily.

In mustard or sesame oil, characteristic aroma may be part of why the oil is selected in the first place.

Not universally. Groundnut and sunflower oils differ in fatty-acid composition, flavour and available varieties. High-oleic sunflower oil is also compositionally different from conventional linoleic-rich sunflower oil. The better choice depends on the actual product and cooking application.

Which of these oils is best for Indian cooking?

There is no single answer because Indian cooking itself is diverse. Groundnut, mustard, sesame, sunflower and safflower oils can each fit different recipes and regional cooking styles. The oil's flavour contribution and the heating method should guide the decision.

Are sunflower and safflower oils basically the same?

No. They come from different plants, and each has its own compositional range. More importantly, both can be available in conventional and high-oleic forms, creating meaningful differences within each category.

Does sesame oil work for heating?

Sesame oil has documented oxidative-stability characteristics associated partly with its lignans and other minor compounds, but the answer still depends on the type of sesame oil, processing and cooking conditions. Should I keep rotating cooking oils?

There is no requirement to rotate oils simply for the sake of rotation. A more practical approach is to choose oils that collectively fit your normal cooking methods, flavour needs and overall dietary pattern. Variety can be useful, but forced rotation is not a substitute for choosing appropriate products and using them well.
