You pick up two bottles of cooking oil. One says cold-pressed. The other says wood-pressed. Both sound traditional, minimally processed and far removed from industrial refining.
So are they simply two names for the same thing?
Quick clarity: no—not automatically.
Cold-pressed describes processing conditions: recognised standards define cold-pressed oils as oils obtained mechanically without the application of heat. Wood-pressed, by contrast, generally describes the type of pressing equipment or method used. A wooden press can potentially produce a cold-pressed oil, but the words “wood-pressed” alone do not prove that the complete cold-pressed conditions were met.
The better question is therefore:
What actually happened to the seeds and oil during pressing?
That is where the two terms either overlap—or separate.
Start With the Most Important Difference: One Describes Conditions, the Other Describes Equipment
The confusion is understandable because both terms sit inside the world of mechanical oil extraction.
But they answer different questions.
Cold-pressed asks:
Under what processing conditions was the oil obtained?
Wood-pressed asks:
What kind of pressing equipment or traditional pressing approach was used?
Codex defines cold-pressed oils as oils obtained by mechanical procedures such as expelling or pressing without the application of heat. Limited subsequent operations such as settling, filtering, washing with water or centrifuging may be used.
That definition does not require the press itself to be wooden.
A hydraulic press may potentially satisfy the definition.
A screw or expeller system may potentially satisfy it.
A wooden press may potentially satisfy it.
The decisive issue is not the material from which the equipment is made.
It is whether the actual process meets the relevant cold-pressed conditions.

- Was external heat applied to the press or seed mass?
- What temperatures developed naturally during mechanical pressing?
- Was the oil subsequently treated beyond permitted physical purification?
- How was the finished oil handled and stored?
The word wood does not answer these questions.
That does not make “wood-pressed” meaningless.
It simply means the claim describes one part of the production story rather than the complete production specification.
Does Cold-Pressed Mean the Oil Never Becomes Warm?
This is one of the most useful technical distinctions.
Cold pressing does not necessarily mean that the oil or seed mass remains literally cold.
Mechanical pressure creates friction.
During the Codex Committee's development of the cold-pressed definition, delegates specifically considered whether there should be a fixed maximum temperature. They noted that temperatures during pressing can rise through friction even when external heat is not applied, and ultimately retained the definition based on no application of heat rather than prescribing one universal maximum temperature.
This is important because customers sometimes encounter rigid online claims such as:
“True cold-pressed oil must always stay below exactly 40°C.”
or:
“Anything above 50°C cannot possibly be cold-pressed.”
Those statements should be treated cautiously unless they are tied to a specific applicable standard or regulatory requirement.
Research literature itself uses varying operational temperature descriptions for cold-press systems, while also recognising that friction inside mechanical presses can increase temperature.
The stronger label-reading question is:
Was heat deliberately applied, and does the process meet the applicable definition used for the cold-pressed claim?
Then What Exactly Does “Wood-Pressed” Mean?
Unlike cold-pressed, wood-pressed is not established in the sources reviewed here as one universal Codex technical category with a single detailed processing specification.
In the market, the expression is commonly associated with traditional mechanical pressing systems—often described through terms such as wooden ghani, chekku or wooden churn/press systems.
But a customer should resist turning the equipment description into assumptions that have not been demonstrated.
A wooden press does not automatically tell you:
- the seed variety;
- whether seeds were roasted;
- whether external heat was used;
- the actual pressing temperature;
- extraction speed;
- oil yield;
- filtration method;
- oxidation status;
- contaminant levels;
- storage conditions;
- or whether the finished oil qualifies as cold-pressed under the relevant standard.
The practical distinction
Wood-pressed = equipment/process-style information
Cold-pressed = defined processing-condition claim
They can overlap.
They are not synonyms.

The important result is not that one term is more fashionable or more traditional.
It is that one claim gives you a different kind of information from the other.
Why Equipment Alone Does Not Determine Oil Quality
Oil quality begins before the press.
The condition of the seed or fruit matters.
Moisture matters.
Cultivar matters.
Storage before extraction matters.
Mechanical pressing conditions matter.
Filtration and storage after extraction matter.
Research on mechanical extraction shows that seed preparation, moisture, pressure and pressing conditions can influence both oil yield and oil characteristics. Screw presses, hydraulic systems and other mechanical technologies can also behave differently because their pressure, residence time and friction patterns differ.
So even two oils carrying the same cold-pressed description may not be identical.
And two oils described as wood-pressed may not be identical either.
Process terminology narrows the question. It does not replace product verification.
Does One Method Preserve More Nutrients?
This is where terminology often drifts into health marketing.
Cold pressing is valued because avoiding intentional heating and intensive downstream refining can help preserve characteristic flavours, pigments and various naturally occurring minor constituents in many oils.
A recent systematic review reports that cold-pressed oils can retain compounds such as phytosterols, polyphenols, carotenoids and tocopherols, although their levels vary greatly between plant sources and processing conditions.
But that does not create a responsible equation such as:
cold-pressed = nutrient-rich
and:
wood-pressed = even more nutrient-rich
The evidence does not support ranking oils simply by how traditional the equipment sounds.
The exact botanical source and actual processing conditions remain essential.
The Oil Source Still Matters More Than Many Shoppers Realise
Consider wood-pressed flaxseed oil and wood-pressed coconut oil.
They may share a pressing story.
Their fatty-acid profiles are nevertheless dramatically different.
The same principle applies to cold-pressed sesame, sunflower, safflower, mustard or groundnut oils.
Codex defines named vegetable oils according to their botanical source and characteristic fatty-acid composition.
So neither cold-pressed nor wood-pressed should become the first and only criterion for selecting an oil.

What oil is this?
Then ask:
How was it processed?
What Should a UAE Shopper Look For?
UAE food-labelling guidance referenced by Abu Dhabi authorities recognises the designation cold pressed oil only for oils conforming to the relevant definition under the applicable fats-and-oils standard.
That makes a cold-pressed statement more than decorative wording.
For a customer evaluating a product labelled wood-pressed, however, useful supporting information becomes especially valuable.
Look for transparency around:
- exact botanical oil;
- seed preparation;
- whether external heat was applied;
- whether seeds were roasted;
- filtration;
- packaging;
- storage;
- manufacturer or supplier traceability.
If the label uses both:
WOOD-PRESSED + COLD-PRESSED
the strongest question is not whether the combination sounds premium.
It is whether the producer can substantiate both parts of the description.
