You are standing in the sweetener aisle with three choices in front of you: white sugar, golden-brown khandsari and a rustic block or pouch of jaggery.
The visual story seems almost automatic. White sugar looks refined. Khandsari looks traditional. Jaggery looks closest to the sugarcane itself.
So it is easy to build a health ranking from appearance alone.
But processing difference is not the same thing as automatic nutritional superiority.
Jaggery, khandsari and white sugar genuinely differ in how they are produced and in how much of the original cane material remains in the finished sweetener. Jaggery can retain more minerals and other naturally occurring constituents than highly purified white sugar. Khandsari also follows a different processing route from refined sugar. But all three remain concentrated sugar-rich sweeteners. The more useful question is not simply “Which one is healthiest?” It is “What am I gaining by choosing this sweetener—and how much of it am I actually using?”
WHO's current healthy-diet guidance recommends limiting free sugars to less than 10% of total energy intake, with a further reduction to 5% or less potentially providing additional benefit. Changing the type of added sweetener does not make that wider question disappear.
Why the “Traditional = Healthier” Shortcut Is So Persuasive
Jaggery and khandsari come with a powerful cultural advantage.
They feel familiar.
They belong naturally in Indian food traditions. Jaggery may appear in chikki, laddoo, payasam, til preparations, festive foods, drinks and everyday home cooking. Khandsari may be used wherever a crystalline cane sweetener is preferred.
That culinary history is real.
What becomes unreliable is the next mental step:
traditional → less processed → more nutrients → therefore healthy in any quantity
Each arrow needs to be examined separately.
A food can retain more of its original plant constituents and still remain a concentrated source of sugars.
That is exactly where this comparison becomes more useful.
A sweetener can be nutritionally different from white sugar without becoming nutritionally equivalent to a whole food.
First, They Are Not the Same Product
White sugar, khandsari and jaggery are not simply three colours of the same finished ingredient.
Their processing pathways differ.
Highly purified crystalline sugar is produced by concentrating sugar-containing juice or syrup, crystallising sucrose and separating the crystals from much of the remaining non-sugar material.
Khandsari sits within the crystalline-sugar family but follows a distinct cane-processing route. FSSAI defines khandsari sugar as sugar obtained from sugarcane juice by an open-pan process and recognises both Desi and Sulphur varieties. Its standard permits crystalline or powdered forms.
Cane jaggery follows another route. FSSAI defines cane jaggery or cane gur as a product obtained by boiling or processing sugarcane juice. Its specification requires at least 90% total sugars on a dry-weight basis, illustrating an important point: jaggery is less purified than refined sugar, but it is still fundamentally a sugar-rich food.
A simplified comparison looks like this:
White sugar
Cane juice / sugar stream → purification → concentration → crystallisation → separation → highly purified sugar crystals
Khandsari
Sugarcane juice → clarification → open-pan concentration → crystallisation → separation → khandsari crystals
Jaggery
Sugarcane juice → clarification → boiling / concentration → concentrated cane mass retained → cooling / setting

The meaningful difference is therefore not simply “processed” versus “unprocessed.”
All three require processing.
The better question is:
What does each process remove, retain or separate?
What Does Jaggery Retain That White Sugar Does Not?
This is where jaggery earns a genuine distinction.
Because non-centrifugal cane sugar retains more of the concentrated cane matrix rather than separating a highly purified sucrose fraction, analytical studies have identified minerals and various minor constituents that are present at higher levels than in refined white sugar.
A review of analytical literature on non-centrifugal cane sugars—including jaggery and related traditional cane sweeteners—found minerals, vitamins, phenolic compounds and other minor constituents in the products studied.
Another elemental analysis comparing sugarcane products found substantially more measurable mineral elements in jaggery and brown sugar than in highly purified white sugar.
That difference is real.
But here is where scale matters.
If you use a small spoonful of jaggery, you are also using only a small quantity of those minerals.
It would therefore be misleading to move from:
“Jaggery contains more minerals than refined sugar”
to:
“Jaggery is an important replacement for mineral-rich foods.”
Those are not equivalent statements.
For iron, calcium, magnesium, potassium and other micronutrients, foods that are normally eaten in nutritionally meaningful quantities—such as pulses, vegetables, nuts, seeds, dairy foods where consumed and other nutrient-dense foods—remain a very different nutritional proposition.
Jaggery can have more micronutrients than refined sugar without needing to become your micronutrient strategy.
And What About Khandsari?
Khandsari deserves its own identity rather than being treated as “powdered jaggery.”
FSSAI's standard specifies khandsari as an open-pan sugarcane product and sets minimum sucrose levels of 93% for Desi khandsari and 96.5% for Sulphur khandsari.
That tells us something useful.
Khandsari is already substantially a crystalline sucrose product.
It may retain characteristics associated with its processing and may differ in colour, flavour, ash and other non-sucrose components from highly refined sugar. But its appearance should not be converted into an automatic nutrition claim.
A pale khandsari is not necessarily “bad.”
A darker khandsari is not necessarily “healthier.”
And rustic-looking crystals do not tell you how much of any specific mineral is present.
If a manufacturer wants to make a quantified nutrition claim, the product needs evidence appropriate to that claim.
Does Jaggery Raise Blood Sugar More Slowly?
This is one of the most important areas to handle carefully.
You may see claims online suggesting that jaggery is “slow release,” has a fundamentally different effect on blood glucose or is therefore suitable as a routine substitute for sugar in people concerned about glycaemic control.
The evidence does not justify assuming that from the name alone.
Jaggery remains rich in digestible sugars.
The exact glycaemic response can vary according to product composition, portion, what it is eaten with and the individual consuming it. Research directly comparing every form of cane jaggery, khandsari and refined sugar under identical conditions is limited.
A small clinical study comparing cane sugar with coconut jaggery in people with type 2 diabetes found no significant difference in peak glucose response or incremental glucose area between the tested sweeteners. That study concerns coconut jaggery—not cane jaggery—so it should not be generalised to every jaggery product, but it does provide a useful caution against assuming that the word jaggery guarantees a substantially gentler glucose response.
The practical rule is simpler:
Do not use “traditional,” “unrefined” or “jaggery” as substitutes for product-specific glycaemic evidence.
The Surprising Difference: The Biggest Upgrade May Be Quantity, Not Colour
Imagine replacing two tablespoons of refined sugar with two tablespoons of jaggery every day because jaggery feels healthier.
The ingredient has changed.
But has the overall sweetening pattern meaningfully changed?
Perhaps not.
Now imagine using whichever sweetener best suits the recipe—but gradually reducing how much added sweetness the household expects.
That may be a much more important change.
WHO guidance focuses on free-sugar intake, rather than creating a preferred hierarchy of traditional versus refined caloric sweeteners. Free sugars should remain below 10% of total energy intake, with further reduction towards 5% offering additional benefit.
This is why the health comparison cannot stop at the packet.
Frequency and quantity matter.
Changing the sweetener can change flavour, processing history and micronutrient traces. Changing the amount can change the sugar decision itself.
Jaggery vs Sugar vs Khandsari: What Actually Changes?

The table is deliberately not a ranking.
The products are genuinely different.
But the difference that matters depends on the job you are asking the sweetener to do.
When Jaggery Can Be the Right Choice
Choose jaggery when its characteristic flavour is part of the food you actually want.
That may include dishes where its caramelised, cane-rich profile contributes to the recipe rather than merely replacing white sugar gram for gram.
Jaggery may also be a reasonable choice when you value a less-separated cane product and the product is clearly identified and responsibly produced.
What we would not do is justify unlimited use by saying:
“It has iron, so the sugar does not count.”
The iron and the sugar can both be true at the same time.
When Khandsari Can Be the Right Choice
Khandsari can fit when you want a dry crystalline sweetener with a less highly purified cane-processing identity than conventional white sugar.
Its texture may make it easier to use in tea, cooking, baking or recipes where a block of jaggery would be inconvenient.
Again, the strongest justification is product identity and culinary fit—not a universal health halo.
When Regular Sugar Can Still Make Sense
White sugar has predictable sweetness, neutral flavour, consistent crystal behaviour and widespread culinary usefulness.
There is no need to portray it as toxic to explain why excessive free-sugar intake should be limited.
A small amount used intentionally can fit differently from habitual heavy sweetening.
Replacing a teaspoon of sugar with a teaspoon of jaggery does not automatically transform the overall diet.
That distinction keeps the conversation practical rather than moral.

Before deciding which sweetener belongs in your pantry, ask:
1. What am I actually buying?
Is it:
- cane jaggery;
- palm jaggery;
- khandsari;
- refined sugar;
- brown sugar;
- or another sweetener?
Names matter because these are not interchangeable categories.
2. Why am I choosing it?
For:
- flavour;
- texture;
- recipe tradition;
- processing preference;
- convenience;
- or because I believe it is automatically healthier?
The last reason deserves more examination.
3. What claim am I relying on?
If the label promises:
- high iron;
- mineral-rich;
- low GI;
- diabetic-friendly;
- immunity support;
- detoxification;
- or another measurable health advantage,
look for evidence specific to that product and claim.
4. How much and how often am I using it?
This is the question most front-of-pack comparisons forget.
A small purposeful amount and a large habitual amount are different dietary decisions.
Common Sweetener Myths
“Jaggery is not sugar.”
No. Jaggery is a sugar-rich sweetener. FSSAI's cane-jaggery standard requires at least 90% total sugars on a dry-weight basis.
“Khandsari is just powdered jaggery.”
No. Khandsari has a distinct crystalline processing identity and is separately standardised by FSSAI.
“Because jaggery contains minerals, I can use more of it.”
That conclusion does not follow. More retained micronutrients do not remove the relevance of total free-sugar intake.
“Darker sweetener means healthier sweetener.”
No. Colour can be influenced by raw material and processing. It is not a complete nutrition analysis.
“Jaggery is automatically low GI.”
Do not assume that. A product name or traditional identity does not establish a specific glycaemic response.

Jaggery can retain more of the cane's non-sugar constituents. Khandsari can represent a distinct, less highly purified crystalline processing route. Those are meaningful differences. Neither difference turns portion size into an irrelevant detail.
